For those who wondered what the music with all the guests clapping at the very end of “Sorbet” was : it is the orchestral part of this aria, just when she sings ”il tiranno e notte e giorno fatta spettro, agiterò” (I will torment the tyrant all day and night when I have become a ghost).
They must have recorded it especially for the show, without Emily Klassen (the soprano who sings this aria at the beginning of Sorbet), in order to end the music with a cadenza for Hannibal’s joke (“Before we begin you must all be warned : nothing here… is vegetarian”). The harpsichord worked well as a badoom tsss.
